Cool Medjool was born from Annabelle's passion for nutrition, her travels, and a personal moment of discovery—falling in love with Medjool dates while pregnant with her twins. In 2024, she created the first Cool Medjool in her Sydney Northern Beaches kitchen, a simple version combining raw cacao, dates, and nut-based fillings.
She called on Matt, a longtime friend from her Berkelo sourdough bakery days, whose thirty years of chef experience transformed that initial concept into something extraordinary. Matt now leads production and product development, though you'll find him handling everything the business needs - from perfecting recipes to posting orders.
During recipe development, Annabelle and Matt discovered they couldn't find a chocolate that met both their standards: nutritious enough for her, delicious enough for him. So they created their own. Using only cacao and dehydrated dates, they developed Cool Medjool's signature chocolate - refined sugar-free, with all the fiber and nutrients of whole dates.
Nic joined the team to help scale their vision. After two decades in digital and tech startups across London, New York, and Sydney, she shifted offline to study herbalism and food as medicine. Now she leads strategy, customer management, and marketing.
Every Cool Medjool is organic, gluten-free, plant-based, refined sugar-free, made with fair trade cacao, and packaged sustainably in home compostable pouches and recyclable boxes.
